In this hands-on class you will learn the secrets of making filo pastry using a plasti (rolling pin) as my mother taught me. Passed down through generations, this is the traditional Greek method of rolling filo - a skill that transforms simple ingredients into something truly extraordinary.
Together we will make a classic Greek pita - working the dough, rolling the filo until paper-thin, and filling it with a seasonal, wholesome filling. You will take home your own pita ready to bake, along with recipe cards so you can recreate the magic at home. Feel free to bring your own tapsi (baking dish) if you like, there will also be aluminium baking dishes provided.
This class includes morning tea on arrival, a shared seasonal table lunch featuring the pita we have made together, and a glass of wine.
Remember to bring an apron to the class if you like to wear one!
